What is Marzipan?

If you have to ask this question, you are not alone! The first time I heard of marzipan was on a television baking show! It is basically a sweetened almond paste dough. The texture is smooth, and it consists of almonds, sugar, and water. Some people also add eggs and corn syrup, but I choose not to when I make it at home. If you’re not comfortable working with raw eggs, this recipe is for you! You blend it all in a food processor and it has many uses. It is often used to add flavor to baked goods, but it is also sometimes colored and used as a decoration such as fondant.

It is often used in Germany, and a recipe I like to make that calls for marzipan is stolen bread. Surprisingly it tastes amazing on pineapple cake and even chocolate cake! You can also combine it with things like sweet cookiestruffles, and challah bread. It’s a really versatile ingredient that’s a lot of fun to play with. It has the perfect amount of sweetness and a really nice almond flavor.

Ingredients

This homemade marzipan recipe is so easy! You don’t have to worry about things like blanched almonds, raw egg whites. This is a vegan marzipan recipe that really keeps things simple and delicious! Instead of using finely ground almonds, I like to look for fine almond flour. I use powdered sugar as a sweetener, but maple syrup can also be a good choice.   • Refined Almond Flour: You should be able to find it in the specialty flour section of the grocery store.
  • Powdered Sugar: This is how you sweeten your marzipan while maintaining a really smooth texture.
  • Water: This helps to combine all the ingredients.
  • Almond extract: This gives you an extra almond flavor and makes it taste like a traditional marzipan recipe.
  • Rosewater: It’s optional, I like it but it’s not for everyone!

Marzipan Recipe

This homemade marzipan is perfect for the holidays. This is exactly what you need for your Christmas cake! It’s also fantastic for marzipan cookies or for covering your cake. Some people choose to eat it like apricot jam! However you choose to use it, you’ll love how simple this recipe is.

  1. Add Dry Ingredients: Add almond flour and powdered sugar to a food processor and pulse until combined into a fine powder.
  2. Add wet ingredients: Add the water, almond extract, and rose water if desired. Mix until everything forms into a big ball. If the mixture is sticky enough to stick to your fingers, add more almond flour and powdered sugar 1 tablespoon each until it’s not sticky enough to stick to your hands.
  3. Knead: Remove to a clean surface and knead a time or two until smooth. Roll into a log and wrap in plastic wrap. Refrigerate for one hour before using.

Tips for Making Homemade Marzipan

Marzipan is a really simple way to take your desserts to the next level. It takes 10 minutes to make and will take an hour to cool. If you travel to Europe you will experience many marzipan desserts! Here are some tips for making your own at home.

  • Filter Materials: There is no need to sift the powdered sugar or almond flour as they will be mixed in the food processor, removing any lumps.
  • Almond Flavor: I always recommend tasting your recipe to see if you have anything you need to add. If you want more almond flavor, add almond extract. If you are not a fan of the taste of almond extract, you can add less or leave it all together.
  • Using Marzipan: If this is your first time using marzipan, I would look up some recipes online! Marzipan can be used to make candies, filling pastries, or even rolled out to cover cakes or pastries. People use it like fondant to cover a cake with a nice smooth finish.

Storage of Leftovers

Marzipan is easy to store in the refrigerator or freezer. It tastes better fresh, but I pulled it out of the freezer and it still had great flavor and texture.

  • In the refrigerator: Store in the refrigerator tightly wrapped in plastic wrap for up to two weeks.
  • In the Freezer: Store in the freezer by wrapping tightly in plastic wrap and then in a ziplock bag for up to two months.
